Quick dishes

 When you have all members of the family staying home together, regular fare will not have many takers. This is the time to experiment and try out new recipes that are quick yet tasty. Here are recipes sent in by some readers:

Spinach Avial

Ingredients

  • 3 cups of spinach
  • 1/2tsp turmeric powder
  • 1 cup grated coconut
  • 3 green chillies
  • 1/2 cup yoghurt
  • 1tsp cumin seeds
  • 3 sprigs of curry leaves
  • 1tsp coconut oil
  • Salt, to taste

Method

Cut spinach into small pieces. Add spinach, turmeric powder and salt into a pan. Cover and cook on medium flame for  2 minutes, without oil or water. Turn off the flame. Grind coconut, cumin seeds, green chilli, curry leaves, yoghurt and add it to the cooked spinach. Add coconut oil and stir well. It’s ready to serve.

Detox Tea

Ingredients

  • 250ml water
  • 1/3 teaspoon tumeric
  • 1/2 inch cinnamon stick
  • Peppercorns, to taste
  • Fresh ginger  – few pieces
  • 1tsp honey

    Method
    Take 250ml water in sauce pan.  Add 2 to 3 small pieces of cinnamon and a little pepper. Allow the water to boil and simmer at low flame for 5 minutes. Add turmeric powder in the water and mix it well. Peel the fresh ginger and cut into small pieces and add to a cup. Add the boiling mixture into the cup and give it a good mix. Let the ingredients sit for 10 minutes. Add honey, mix and drink.

Bread Rolls

Ingredients:

  • 4 slices of white bread
  • 1 egg, ½ cup milk
  • 1tsp vanilla essence
  • 3tsp sugar
  • 3-4tbsp jam

 Method

In a flat bowl mix all ingredients except bread and jam. Then take a chappati roller and roll the bread slices to make them flat. Apply 1tbsp of any jam to the bread and roll it well.Then dip in the egg mixture and shallow fry in a pan with ghee or butter. Serve warm.
